Yummy Christmas Recipe: Glazed Balsamic U.S. Pork Spare Ribs with Creamed Corn and Grilled Asparagus

HONEY GLAZED PORK LOIN INGREDIENTS:
FOR THE PORK LOIN:
1 kilo pork sirloin
1 tablespoon olive oil
FOR THE SPICE RUB:
1 teaspoon sweet paprika
1 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon dried thyme 1/2 teaspoon dried rosemary salt and pepper, to taste
FOR THE HONEY GLAZE:
10 cloves garlic, minced
1/4 cup honey
3 tablespoons soy sauce
1 tablespoon Dijon or American mustard 1 tablespoon olive oil
PROCEDURE
1. Preheat oven to 375 ̊F. Line a rimmed baking sheet with aluminum foil or parchment paper and set aside. Pat dry pork loin with paper towels.
2. In a small mixing bowl combine paprika, garlic powder, onion powder, thyme, rosemary, salt and pepper.
3. Lightly rub pork loin with Olive Oil. Take the spice mix and rub it all over the pork loin.
4. Heat olive oil over medium heat and sear the pork loin until browned on all sides; about 3 to 5 minutes per side. Transfer pork loin to previously prepared baking sheet, fat-layer side up; set aside.
5. In a bowl, combine garlic, honey, soy sauce, mustard and oil; whisk until well combined. If too thick, add a bit more oil or soy sauce.
6. Brush the remaining honey mixture over the pork loin. Roast for 25 minutes.
7. Pull pork roast out of the oven. Tent a piece of foil over the pork so the top doesn’t burn, but the inside continues to cook. Put back in the oven and continue to cook for 25 to 30 more minutes, or until internal temperature of the pork loin reaches 145 ̊F.
8. Remove baking sheet from oven and loosely cover meat with foil; let rest for 10 minutes. Cut the pork into slices and serve with mashed potatoes.
MASHED POTATOES
INGREDIENTS:
500 grams potatoes
3 cloves garlic optional
1⁄3 cup salted butter melted 1 cup all-purpose cream Salt and pepper to taste
PROCEDURE
1.Peel and quarter potatoes, place in a pot of cold salted water.
2.Add cloves of garlic & bring to a boil, cook uncovered 15 minutes or until fork-tender. Drain
well.
3.Heat milk on microwav until warm.
4.Add butter to the potatoes and begin mashing. Pour in heated milk a little at a time while
using a potato masher to reach desired consistency.
5.Season with salt and pepper. Serve hot with Honey Glazed U.S pork sirloin.
