Follow along with the Jones family to create the best Portuguese buns around!

Ingredients:
4 cups Flour
1 3/4 cups warm water (110 degrees F)
2.5 Teaspoons instant yeast
1 1/2 Tablespoon Sugar
1 1/2 Teaspoon Coarse Salt
1 Tablespoon Crisco

Step 1.
Put water, yeast, salt, sugar into mixer and mix for 1 minute on low. Then let rest for 5 minutes.

Step 2.
Add crisco and mix for 1 minute

Step 3.
Add flour to the liquid and change over to dough hook. Mix for 3 minutes starting on low and gradually speeding up to medium.

Step 4.
Now that dough has formed, gradually add more flour to the dough 1 tablespoon at the time. Just enough to stop the dough from sticking to the bowl. Dough should be stretchy.   If it’s not, add some water back in.

Step 5.
Transfer dough to a large greased mixing bowl, cover with cling wrap and let rise for 30-45 mins.

Step 6.
Remove cling wrap, stretch and fold over dough inside the bowl 17 times, re wrap bowl and let rise for 45 more mins.

Step 7.
Get a floured work surface and break off pieces of dough from the bowl slightly smaller than a baseball. Flour them and roll them smooth into the shape of a potato.
Press side of your hand to form a line across the middle of the bun. Fold sides up so it looks like a bum. Gently place upside down in a clean tablecloth in rows. Fold cloth between rows like an accordion. Cover with a cloth and let rise for 45 mins.

Step 8.
Preheat oven to 390.
Line 2 baking sheets with parchment paper.
Gently flip bun back over into your hand and place on parchment paper.
Use sifter to sprinkle flour over buns. Then bake for 12-18 mins depending on your oven.
